- 1 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1½ teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 tablespoon vanilla extract
- 1 cup hot brewed coffee
For the Coconut-Pecan Filling:
- 1 cup evaporated milk
- ½ cup unsalted butter
- ¾ cup brown sugar
- 3 large egg yolks
- 1½ cups shredded coconut
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
For the Chocolate Glaze:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 1 tablespoon butter
Instructions
Step 1: Make the Coconut-Pecan Filling
- In a saucepan over medium heat, combine evaporated milk, butter, brown sugar, and egg yolks. Stir constantly until thickened (about 5–7 minutes).
- Remove from heat and stir in coconut, pecans, and vanilla extract. Let it cool while preparing the cake batter.
Step 2: Prepare the Cake Batter
- Preheat oven to 350°F (175°C) and grease a Bundt pan.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- Add butter, eggs, buttermilk, and vanilla extract, and mix until smooth.
- Slowly pour in hot coffee while mixing (batter will be thin, but that’s okay!).
Step 3: Assemble & Bake
- Pour half of the cake batter into the Bundt pan.
- Spoon the coconut-pecan filling over the batter, avoiding the edges.
- Pour the remaining batter over the filling.
- Bake for 50–55 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 15 minutes, then turn it out onto a wire rack to cool completely.
Step 4: Make the Chocolate Glaze
- Heat heavy cream until warm (but not boiling).
- Pour over chocolate chips and let sit for 2 minutes, then stir until smooth.
- Add butter and stir until glossy.
Step 5: Glaze & Serve
- Drizzle the chocolate glaze over the cooled Bundt cake.
- Let it set before slicing.
Serve & enjoy your rich, chocolatey, and nutty German Chocolate Bundt Cake! 🍰✨
