Ingredients (Serves 4)
For the Soufflé:
- 4 tablespoons unsalted butter (plus extra for greasing)
- 2 tablespoons granulated sugar (for coating ramekins)

- 2 tablespoons heavy cream
- 2 tablespoons all-purpose flour
- ½ cup whole milk
- ¼ teaspoon salt
- 2 large egg yolks
- 3 large egg whites
- ¼ teaspoon cream of tartar
- 2 tablespoons granulated sugar

Instructions
Step 1: Prepare the Ramekins
- Preheat oven to 375°F (190°C).
- Grease four 6-ounce ramekins with butter and coat with granulated sugar, ensuring even coverage. Tap out excess sugar.
Step 2: Make the Chocolate Base
- In a saucepan, melt butter, heavy cream, and chocolate over low heat, stirring until smooth.
- Stir in flour and cook for 30 seconds.
- Slowly whisk in milk and cook until thickened (about 1 minute).
- Remove from heat, add salt, and whisk in egg yolks until smooth.
Step 3: Whip the Egg Whites
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add sugar and beat until stiff, glossy peaks form.
Step 4: Fold & Bake
- Gently fold 1/3 of the egg whites into the chocolate mixture to lighten it.
- Carefully fold in the remaining egg whites until fully incorporated (do not overmix).
- Divide the mixture evenly among the ramekins.
- Run a knife around the edges of the batter inside each ramekin (this helps them rise evenly).
- Bake for 12–15 minutes or until the soufflés rise and have a slightly jiggly center.
Step 5: Serve Immediately
- Dust with powdered sugar and serve with whipped cream or ice cream.
